Creamy frumenty with sausages to warm you up

Method:

  1. Begin by cutting the sausages into small, bite-sized pieces. Sauté them in a pan over medium heat. Due to their natural fat content, no extra oil is necessary. Once the sausages are browned, add the 300 grams of sour Trahana to the pan. Followed by pouring in the 700 ml of water. Allow the mixture to come to a boil.

  2. Upon reaching a boil, reduce the heat to a simmer. Let the concoction simmer for approximately 10 minutes, allowing the flavors to meld together. This step ensures a rich and savory base for your dish.

  3. Squeeze the juice of the lemon into the mixture, providing a delightful zest. Season with salt and pepper to taste, ensuring a perfect balance of flavors. As the trahana and sausages simmer, prepare the garnishes. Cut the Katiki Cheese into small cubes, chop the fresh oregano, and set aside the croutons.

  4. Once the trahana is cooked to perfection, serve the dish in bowls. Top each serving with a sprinkle of Katiki Cheese, a handful of croutons, and a generous garnish of fresh oregano. Finish by drizzling 20 ml of high-quality olive oil for a touch of richness.

  • 200 grams Tzoumagias sausages (Greek beef & pork sausages with herbs and spices)

  • 1 lemon

  • 40 grams croutons

  • 50 grams Katiki cheese or any slightly savory cream cheese

  • 2 sprigs fresh oregano

  • 20 ml olive oil

  • Salt & Pepper
