Fava bean hummus

This creamy dip is crafted with flavourful fava beans, combined with garlic, tahini, and a good touch of lemon for an wholesome taste. The best part? It's incredibly easy to make, perfect for spreading on a quick sandwich or pairing with your favourite drinks.

Servings: 1 large dish of hummus
Time: 45 minutes

Method:

1) Rinse the fava beans under cool water in a sieve. Also, clean the onion and cut it into irregular pieces (no need to finely chop).

2) Heat olive oil in a saucepan over medium to high heat and sauté the onion for 1-2 minutes. Add the fava beans and stir for another minute until glossy.

3) Pour 500ml cold water and bring it to a boil. Skim off any foam and then reduce the heat, cover with a lid, and let the fava beans simmer for 30 minutes. It's best not to stir the fava beans too much as they can stick to the bottom and easily burn. Once cooking is complete, allow the fava beans to cool to room temperature.

4) In a blender, add the cooked fava beans, garlic, tahini, lemon juice, cumin, salt, pepper, and olive oil. Blend well until you achieve a smooth and creamy texture.

5)Spread the hummus on a plate, creating ridges with a spoon. Drizzle with olive oil, sprinkle with finely chopped parsley, and add sumac for a lemony flavor. Serve with plenty of freshly toasted bread, vegetables, or any other accompaniments you prefer.

500ml water

1 large onion

1 clove of garlic

30g tahini

2 lemons

200ml olive oil

Salt & Pepper
