Zucchini fritter wraps with hummus and crunchy veggies

Get the lunch game to the next level with this easy peasy wrap, stuffed with fresh veggies and super crispy on the outside and tender on the inside Ergon zucchini fritters. If you are over boring cheese wraps, then you just discovered your next best light meal that you can easily take at work or on a pick nick with you.

Method:

1) Put some olive oil in a non-stick frying pan, set fire to medium and cook the Ergon Deli zucchini fritters for about 5-7 minutes until golden brown and crispy on the outside. Set them off the fire and let them rest on a piece of paper towel.

2) Divide the fritters in the pita breads and fill them with hummus and fresh vegetables.

3) Wrap them in a roll, cut in two and enjoy!

Ingredients:

Ergon Deli zucchini fritters with feta cheese & fresh herbs (You’ll need 4 fritters)

1 tomato, cut in small cubes

1 cucumber, in this slices

Greens of your choice (arugula, lettuce, fresh spinach, etc.)

100 g Ergon hummus

2 pita breads of your choice

Olive oil
